The first time I was offered miso soup, years ago, I passed. Enjoying Traditional Japanese Fermentation. Makes four large or six smaller servings. This soup, which is delicious, gives me an opportunity to experience one of my favorite smells: garlic sautéing in butter. A recent journey into a grain-free diet has brought him back around to having nutrient rich soup for breakfast and this recipe is his own creation. I used vegetable broth and water instead of just water and loaded it with veggies and tofu. This is a heartier miso soup than the traditional broth I usually make. Miso soup is an integral part of most Japanese meal. This vegetarian soup is great for warming you up on cold winter days; although it\'s light, it\'s satisfying and nourishing. Whenever I go to a Japanese restaurant, I have to start my meal with a bowl of miso soup. Little did I know, it's easy to make and tastes SO much better homemade. Miso paste is mixed into dashi, along with other ingredients such as tofu, seaweed (usually wakame) or mushrooms. I'm looking at you, Saturday: sugar-coma here I come! Though I grew-up in Japan, between the ages of 5~14, and ate Japanese school lunches K~4th grade, at home, we ate Iranian food my Mother cooked. I think the cloudy broth and seaweed made me nervous. I had some rice crackers with it and it was a great light lunch.
